Cheddar Melts

Have you ever walked by the clearance rack in your local bakery and thought, “I’m going to take that bargain. Surely I can find something to make with this type of bread.”? That is exactly how this recipe came about. I found some yummy looking onion rolls, bought them and literally did a search on Pinterest for recipes using onion rolls. What I found was this copycat recipe for Arby’s roast beef and ham cheddar melts.

As far as sandwich recipes go, this has several steps but it uses simple ingredients you probably already have in your kitchen.

I am a big fan of Arby’s sauce and I didn’t think the recipe I found tasted like it so I added some cumin to the sauce and it came out pretty darn close to the original. Also, the cheese sauce included here is good but I think I’m going to try it with Velveeta next time. Just a thought in case you want to experiment a bit with this. If you are lucky enough to have these Arby’s curly fries sold in your local store, I suggest adding those to make the meal truly authentic.

Once all the parts of this recipe are ready, keep them warm. Be sure to assemble the sandwiches and serve them immediately. The cheese sauce cools quickly and isn’t near as tasty when it’s cold.

Cheddar Melts

Ingredients:

  • 4 onion buns
  • 1 pound thinly sliced, deli roast beef or ham
  • 5 slices American cheese
  • 3 tablespoons half and half
  • 1/4 teaspoon garlic powder
  • ground black pepper, to taste

Sauce:

  • 1/2 cup ketchup
  • 2 teaspoons water
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cumin
  • pinch of salt

Preparation:

  1. Heat a skillet over medium heat. Add the meat and place a lid over the top. Then turn the heat to medium low. Cook the meat until warmed through.
  2. Meanwhile, stir together the sauce ingredients and spread on the buns.
  3.  In a pot on the stove over medium-low heat, add cheese, milk, garlic powder and pepper. Stir until completely melted and evenly combined.
  4. Place the meat on the buns, add the cheese sauce, and a little more sauce (if desired). Top the sandwiches off with the other half of the roll.

  5. Serve immediately, with curly fries, for an authentic in-home Arby’s experience.
